Recipe - Chicken Noodle Stir Fry

Ingredients
1 garlic clove, crushed
1 thumb of ginger, peeled & sliced
1/2 red chilli, deseeded & sliced
1/4 red pepper, sliced
2 mushrooms, sliced
1 chicken breast, sliced
1 tsp satay sauce
1 tbsp soy sauce
2 tbsp coconut milk
100ml water
1 tbsp cornflour
1 noodle nest

Method

  1. Heat a non-stick pan over amedium heat and add the garlic, ginger, chilli, pepper and mushrooms and cookfor 3-4 mins.
  2. Add the chicken and cook for afurther 3-4 mins tossing regularly.
  3. Mix in the satay sauce, soysauce, coconut milk and water, reserving approx. 1 tsp.
  4. Mix the cornflour withremaining water to form a paste and add to the pan.
  5. While the sauce is thickening,cook the noodles according to packet instructions.
  6. Once the noodles are cooked,toss among the chicken and vegetables until well coated in sauce.
  7. Serve immediately.

If you would like a vegetarian stir fry,simply swap the chicken for tofu or a meat alternative of your choice such asQuorn pieces.
